The grapes grow on the Villa Noria estate near Montagnac, in the Hérault region of Southern France.

Location / Origin: Villa Noria is located in the Languedoc, between the Mediterranean Sea and the higher hinterland. The proximity to the coast brings cooling breezes to the sunny vineyards.

Soil: The vines grow in clay-limestone soils. Clay retains moisture during dry periods, while the calcareous subsoil ensures a balanced soil structure and good drainage.

Climate & Influences: The Mediterranean climate provides plenty of sun and sufficient warmth for ripe fruit expression. At the same time, the maritime influence supports the fresh and refined side of the grapes.

Vineyard management: The estate is certified organic and practices agroforestry, where vines, trees, and natural vegetation work together to promote biodiversity and soil vitality.
The vinification process was entirely developed to create an aromatic and structured rosé without first producing an alcoholic wine.
How is 0.0% achieved without dealcoholization? A natural leaven made from indigenous yeasts and lactic acid bacteria allows the grape must to ferment without forming any alcohol.

Harvest & Selection: The grapes are harvested at night to keep them cool and preserve their fresh aromas during transport to the cellar. This is followed by destemming and gentle crushing.

Fermentation: The grapes undergo 12 hours of cold skin maceration at 3 °C to extract aromas while maintaining the delicate, light pink color. After pressing, the must ferments with Villa Noria's own natural leaven, followed by filtration, pasteurization, and bottling. Added aromas, preservatives, and sulfites are unnecessary in this process.
The rosé is made entirely from a single grape variety that provides sufficient aroma, color, and structure for a convincing non-alcoholic style.

100% Syrah – Languedoc: Syrah brings aromatic intensity, a refined salmon-pink color, and a juicy structure. The grape variety gives the rosé enough fruit and character to hold its own at the dinner table.
