The organic Pinot Noir grows on the Mediterranean terroirs of the estate's own vineyards near Montagnac, in the Hérault region of Southern France.

Location / Origin: Villa Noria is located near Pézenas, between the Mediterranean Sea and the hilly hinterland of the Languedoc. The grapes come from the estate's own nearly 90-hectare property.

Soil: The vines are rooted in clay-limestone soils. The clay retains moisture during dry periods, while the calcareous subsoil ensures good drainage and balanced development of the grapes.

Climate & Influences: The Mediterranean climate brings plenty of sun and warmth, while the proximity to the sea cools the vineyards, contributing to freshness and aromatic precision.

The unique production method was developed to preserve color, aroma, and tannins from the Pinot Noir without having to dealcoholize the beverage afterward.
How is 0.0% achieved without dealcoholization? A natural house culture of indigenous yeasts and lactic acid bacteria allows the grape must to ferment without producing alcohol.

Harvest & Selection: The grapes are harvested at night so that they remain cool and retain their aromatic freshness during transport to the cellar, followed by destemming and gentle crushing.

Fermentation: The grapes undergo a 6-hour warm skin maceration at 60 °C to extract aromas, color, and tannins. After pressing, the must ferments with Villa Noria's natural levain, followed by filtration, pasteurization, and bottling. The cuvée is made without added aromas, preservatives, or sulfites.
Pinot Noir gives this non-alcoholic red cuvée its refined fruit, recognizable color, and light yet distinct structure.

100% Pinot Noir – Languedoc: Pinot Noir brings cherries, red berries, and cassis, complemented by fine tannins and an elegant structure. In this way, the grape variety gives the cuvée more depth and grip than a purely fruit-driven non-alcoholic beverage.
