The winemaker chooses to harvest the grapes during their rest, which happens early in the morning. They are transported in small crates to the press for a direct, soft pressing. The beautiful juice is partially aged in oak barrels, which benefits the wine's structure. During this period, it gains strength and suppleness; drinking this white wine is simply a joy.
