Vinification and aging
The wine is made traditionally, with an emphasis on manual selection and careful processing of the grapes.
• Harvest & Selection: The grapes are harvested by hand and selected twice: first in the vineyard and then again in the cellar on a sorting table. This ensures that only ripe and healthy fruit goes into fermentation.
• Fermentation: Vinification occurs in the classic Bordeaux style in a combination of stainless steel and concrete vats. Stainless steel helps keep the fruit pure, while concrete contributes to a calm, balanced development of the wine.
Tasting notes and serving suggestions
Château Yveline 2020 opens with fruity aromas, soft earthy notes, and a hint of aging that perfectly suits Lalande-de-Pomerol. The palate is full and supple, with round tannins, a clean structure, and the classic softness of the Right Bank. As the wine develops, the earthy aroma can move more towards truffle.
