Vintage & Harvest: 2023 experienced no extreme heat or drought, with good water reserves after a cold and wet winter. This allowed the grapes to ripen fresh, healthy, and evenly, with a pure mineral and slightly saline expression.

Fermentation: The wine is vinified in concrete and stainless steel. Stainless steel preserves the fresh Sauvignon Blanc aromas, while concrete can give the wine extra rest, texture, and breadth.

Analysis & Structure: With 13.09% alcohol, 4.84 g/l acidity, and 0.85 g/l residual sugar, this Pouilly-Fumé remains crisp dry, fresh, and precise. This combination supports the citrus, minerality, and gastronomic length.

Tasting Notes and Serving Suggestions

In the glass, the wine is pale yellow with light golden reflections. The nose opens intensely with boxwood and fresh grapefruit, followed by white fruit, coconut, white peach, white pepper, basil, mango, and guava. The taste is ample, fresh, and mouth-watering, with grapefruit, yuzu, toasted notes, citrus zest, salinity, and a long, exotic finish.
