The Sauvignon Blanc grapes for this beautiful white wine from Domaine des Souterrains are planted on the high slopes of the Cher valley. The soil consists of silt-rich clay, sand, flint, and limestone. Rainfall is low, making it incredibly favorable for grape cultivation. The 35-year-old vines therefore develop unique characteristics that result in this rich white wine.

Sustainable winegrowing at Domaine des Souterrains

The vineyards of Domaine Les Souterrains are located in France. Despite the efforts of wine-producing countries like Italy, Spain, Argentina, and New Zealand, France remains the leading wine country. The historic vineyards date back to 1820 and are located in the Cher Valley near the Loire. The story began in 2011 when the true entrepreneurs Nicolas Mazzesi and his wife purchased the estate. Their wine project is of unparalleled quality and they renovated the cellar with nine stainless steel tanks and 20 oak barrels. The grapes are individually sourced from their 23-hectare vineyard. Here, Domaine des Souterrains operates according to Terra Vitis, which means respecting the environment and operating sustainably. This vineyard landscape offers optimal exposure, protection from wind, and good drainage of rainfall. Born on "Perruche"-like soils composed of flint, silica, limestone, and slate, the Sauvignon Blanc grapes are carefully harvested by hand. In the cellar, the grapes undergo a 12-hour skin maceration, after which they are hand-sorted. Only the very best grapes are selected for this elegant white wine. Finally, the wine is aged for nine months on the lees in stainless steel tanks.
