Apostelhoeve's success stemmed from this white wine made from the Auxerrois grape. A grape variety often found in relatively cool wine regions, it thrives so well in the Limburg mountains. We've noticed the vines aging with deeper roots, resulting in a fuller, more powerful white wine. But the Auxerrois grape holds even more significance for Apostelhoeve, as it's the grape that has made the house so successful. You can taste a great deal of love and passion in this white wine.

What does the Limburg soil do to the Auxerrois grape?

Originally, the Auxerrois grape is a French cross between Pinot Blanc and Heunisch Weiss and was intended for the cooler plains of Alsace, among other regions. Today, Auxerrois is primarily grown in Limburg. Winemaker Mathieu Hulst of Apostelhoeve knows better than anyone how to handle this beautiful white grape. While this grape demands a lot of attention, the resulting bunches are phenomenal. Long clusters of firm grapes are harvested early in the morning to preserve their freshness. The rich marl and gravel soils give Auxerrois great depth and richness.

As soon as you open the bottle, a beautiful, vibrant aroma greets you. Plenty of richness of white fruit, blossom, and citrus. But if you smell carefully, you'll also detect a touch of chalk, grapefruit, and fresh mint. The palate is crisp and dry with notes of ripe pear and plenty of green apple! On the back of the tongue, it offers even more impressions of green herbs, grapefruit, lime zest, and gooseberries. A real winner. With its lovely soft acidity, it's one of the most beloved wines from Apostelhoeve Maastricht. This wine pairs wonderfully with white fish, a nice fresh salad, and tuna. And don't forget asparagus, as that's also a fantastic pairing with this Apostelhoeve Auxerrois.
