What is Amarone?

Amarone della Valpolicella is a dry red DOCG wine from Veneto, made from partially dried grapes. Drying concentrates the sugars and aromas, after which the wine is fermented dry to at least 14, but often 15+ percent alcohol. This immediately explains the full-bodied style that connoisseurs seek.

Origin and vineyards

The region lies north of Verona and encompasses subzones such as Classico and Valpantena. The combination of chalky hills, good ventilation, and long, cool drying after harvest gives Amarone its strength and purity. Laws only permit vinification from December 1st, meaning the grapes rest and dry for at least several weeks before fermentation begins. This drying also explains the higher price tag. The grapes lose 30 to 50% of their weight during drying. Therefore, far more grapes go into a bottle of Amarone than in other wine styles.

Grape and style

Amarone is a blend with 45–95 percent Corvina and/or Corvinone , 5–30 percent Rondinella , and a small number of other blue varieties permitted within strict limits. These proportions are legally mandated and create the recognizable combination of depth and freshness you taste in a good Amarone.

Vinification and maturation

The appassimento typically takes place for three to four months in ventilated rooms, sometimes longer at top estates. After destemming and pressing, slow fermentation follows on concentrated must. Amarone ages for at least two years , while Amarone Riserva ages for at least four years before release. This explains why you often see Amarone released later than other wines from the same vintage.

Storage and serving

At home, choose a serving temperature around 16 to 18 degrees Celsius and a large glass to allow the aromas to fully develop. Many Amarones have a cellaring potential of 10 to 20 years or more , depending on the producer and vintage.
