For the Girlan Patricia Pinot Noir, the grapes are harvested by hand. After careful destemming, the must is gravity-fed into steel tanks, where alcoholic fermentation takes place for 18 to 20 days. After this phase, the wine undergoes malolactic fermentation and is then aged for 12 months in large wooden barrels. The final stage of the process consists of 6 months of bottle aging, allowing the wine to develop its full character.
