The grapes are harvested by hand and carefully sorted, after which they are 100% destemmed. They then undergo a cold maceration period of about a week in concrete vats at temperatures below 10°C. As the temperature rises, alcoholic fermentation begins, during which color and fruity aromas are extracted by pumping over. After a three-week maceration period, the wine is aged for 12 months in French oak barrels, 15% of which are new. The wine is then blended in stainless steel tanks and bottled after 18 months, lightly filtered.
The vineyards are located in the Maranges region, west of Santenay, and at a higher altitude near Saint-Aubin. The soil consists of clay and limestone marl, which contributes to the minerality and complexity of the wine. The vines have an average age of 45 years, resulting in a limited yield of around 7,500 bottles per year, yet with high concentration and quality.
Serve this wine at a temperature of 14-16°C. The Hautes Côtes de Beaune is an excellent accompaniment to poultry, light meat dishes, and soft cheeses. Its fruity and elegant character also makes it an ideal partner for dishes like mushroom risotto and grilled vegetables.
