Old vines for Calmel & Joseph La Fabrique Vieux Carignan
For 125 years, the vines have produced grapes perfectly adapted to their environment. During this time, the vines have been carefully maintained and replanted with the same wood to preserve their unique characteristics. The fact that the vines are over a century old gives this wine exceptional heritage value and contributes to the rich history and tradition of the region. These historic vines are an important part of the provenance of La Fabrique Vieux Carignan and give the wine a unique and authentic character. It is a tribute to the past and a celebration of the expertise of the winemakers who have cared for these old vines for all these years. The Carignan grapes are harvested entirely by hand at peak ripeness. After harvest, the grapes are destemmed but not crushed in the winery before being placed in barrels. Alcoholic fermentation takes place for 15 days at a controlled temperature. During fermentation, a large, aerated pumpover is performed to promote the extraction of color and flavors. The other pumpovers are light, lasting only 5 minutes per day. After fermentation, the wine is racked and decanted several times before being placed in barrels for malolactic fermentation. This process helps stabilize the wine and adds complexity and softness to the flavor.
