Ambre Toscana Da Uve Leggermente Appassite Rosso 2023 demonstrates the seductive nature of modern Tuscan appassimento, with its deep color, ripe fruit, and velvety texture. The Ambre line is designed to create wines that offer immediate pleasure while clearly demonstrating their provenance. This red Ambre exudes just that: Tuscan warmth, concentrated through the gentle drying of the grapes, yet with enough freshness to make you want to refill the glass.

Vineyards and region

The grapes for this Tuscan red wine come from various select vineyards within IGT Toscana. The vines are grown on clayey soils with a moderate limestone content, which ensures strength, juiciness, and good natural acidity. The warm Tuscan climate gives the grapes ample time to fully ripen, while the limestone in the soil creates tension on the finish. For this cuvée, only the finest bunches are selected from multiple plots, ensuring that the Ambre Rosso style retains the same full, harmonious character year after year.

Vinification and maturation

When the grapes have reached approximately 80% of their ripeness, they are harvested by hand and placed in crates. In these crates, the drying process begins at around 16°C, lasting 2 to 3 weeks until the grapes have lost around 30% of their weight. This light appassimento process concentrates the sugars, acidity, and aromas without drying out or damaging the grapes. After destemming, cold skin maceration follows at 0 to 4°C for 4 to 6 days to extract additional color and fruit aromas from the skins before fermentation begins. Alcoholic fermentation then takes place at a controlled temperature of around 24°C for 10 to 14 days, allowing the ripe fruit and soft tannins to fully develop. The wine then rests in tank to allow the various components to meld; the result is a full-bodied yet balanced style with an alcohol content of around 14% and a subtle sweetness thanks to the appassimento process.
