Castello di Neive Metodo Classico Spumante, Piedmont, Italy

The Castello di Neive Metodo Classico is a sparkling wine produced using the traditional method, where the second fermentation takes place in the bottle. What exactly does Metodo Classico mean? This is the Italian term for the same production method as in Champagne, where the mousse is created by re-fermentation in the bottle and prolonged contact with the lees ensures extra complexity.

With this wine, Castello di Neive demonstrates that, in addition to Barbaresco, the estate also shows craftsmanship in sparkling wines.

Origin: Langhe, Piedmont

The grapes originate from the hilly landscape of the Langhe around Neive.

Grape and vinification

Grapes – Langhe, Piedmont
The wine is produced using Metodo Classico, where the base wine undergoes a second fermentation in the bottle. During this phase, the mousse develops, and the wine matures on its lees for an extended period, contributing to complexity and refinement.

After aging, the disgorgement process follows, where the yeast is removed and the wine is sealed with cork and muselet.

Character and style

In the glass, this Metodo Classico displays a clear color with a fine, persistent mousse. Through aging on the lees, the wine develops aromas of fresh fruit and subtle brioche notes. The acidity provides tension and balance, while the mousse remains refined and integrated.

Serve chilled around 6–8 °C to allow the freshness and elegance to fully express themselves.

The estate manages renowned crus such as Santo Stefano, Gallina, and Albesani for Barbaresco, but also demonstrates its versatility with the Metodo Classico.
