This Poley Oloroso and Rama belongs to the Poley series of wines from the Toro Albala winery. They are all made from Pedro Ximenez grapes. This family business was founded in 1922 by Jose Maria Toro Albala. Over the years, the winery has grown and continued to develop its position in the wine market. So well, in fact, that its many wines are now a staple on many wine lists. In the early years, the winery focused on wines that needed to be aged for extended periods to enhance their elegance. At the time, this was a significant risk due to the economic crisis. But courage and passion brought this bold idea to great success. They now specialize in the Pedro Ximenez grape. Originally, it was a grape capable of reaching such a high sugar content that it was primarily used for sherries and sweet wines. But now, beautiful dry wines like this one are also made from it.
Unique winemaking for Poley Oloroso and Rama
The grapes are given time to develop their unique characteristics on the rolling vineyards. At peak ripeness, they are carefully harvested and undergo a meticulous vinification process. This is followed by a 15-year aging process using the criaderas and solera system. This centuries-old method involves stacking several barrels horizontally. The top row contains the youngest wine, and the bottom barrels contain the oldest. Throughout the year, wine is drawn from the bottom barrels and bottled. The Oloroso emerges in the glass with a beautiful light color. Its aromas are intense thanks to its American oak aging. Aromas of toffee, vanilla, and dried fruit stand out, blending with the scent of ripe fruit that is later added.
