Sustainable wine growing at Tahbilk

Founded in 1860, Tahbilk is a historic family-owned winery renowned for its rare, aged Marsanne. Known as "tabilk tabilk" in the language of the Daungwurrung clans, Tahbilk translates as "place of many waterholes." This perfectly describes this prime wine-growing landscape, located in the Nagambie Lakes region of Central Victoria. The estate encompasses 1,214 hectares, including 11 kilometers of frontage to the Goulburn River. Environmental sustainability is paramount at Tahbilk, and in 2013, they became carbon neutral. In 2016, Tahbilk was named "Winery of the Year" by James Halliday. Tahbilk has Shiraz vineyards dating from the 1860s to the 1990s. The oldest surviving block is the "1860 Block," planted on its own roots in sandy soils, making it impossible for phylloxera to colonize the vine roots. Tahbilk's vines are sustainably farmed; composting and mulching improve soil health by promoting earthworm activity. Mulching helps control weeds and conserves water, reducing vine stress. Older vines are hand-picked, while younger vines are harvested mechanically.

The aroma and taste of Tahbilk Shiraz

Shiraz is vinified traditionally. After being harvested by hand, fermentation takes place in open vats over 155 years old. The wine is then aged for 18 months in large French oak barrels before bottling. The result is superb. The nose boasts expressive aromas of plums, blackberries, and spices. It has a spicy flavor with fine, lush tannins and a rich, lingering finish. Perfect with barbecue and grilled red meats.
