Symington Pequeno Dilema Douro Branco is born from the fertile soil of two Symington family vineyards: Tapadinha, located at 580 meters in the Torto River Valley, and Chões, at 520 meters in the Pinhão River Valley. The unique terroir of these valleys, especially their altitude, plays a crucial role in wine production. The higher elevation provides more moderate temperatures and promotes balanced ripening of the grapes. The vinification process for Symington Pequeno Dilema Douro Branco begins with the gentle destemming of the whole grapes. They are then carefully sent to the press. To ensure ideal fermentation conditions, the must is clarified at very low pressure and then filtered. Fermentation begins in barrels and then moves to various barrels, both new and used. Maturation on the lees rounds out the wine's profile, resulting in a structured, full-bodied wine with a creamy texture. The wine is bottled until the summer following the harvest. Extended bottle aging contributes to the integration of the oak, ensuring optimal texture, aroma, and mouthfeel, and extending the wine's shelf life.
