This Tommasi top wine is sometimes affectionately called a white Amarone. Why? Because some of the Garganega and Chardonnay grapes used for this Tommasi Adorato Appassimento are dried. This technique is inspired by Amarone, the crown jewel of Veneto and Valpolicella. For this Tommasi Adorato Appassimento, the grapes are placed on wooden beds after harvest. After one month, the grapes are dried. While there's still juice in the grapes, this juice is much more concentrated and therefore fuller and more powerful. The Appassimento technique is a winning formula that Tommasi has mastered.
