Our Review

I'm not really a fan of rosé Champagne, but I'd gladly make an exception for this one. I often find most rosé Champagnes lack a certain softness, which comes from the Pinot Noir. In this Boizel, however, that softness is really present. In my opinion, this is the best rosé Champagne you can get for under €100.

Champagne Boizel Rosé Absolu is a refined rosé Champagne for festive aperitifs, elegant lunches, and desserts with red fruits. This cuvée stands out with its delicate color, fine mousse, and a blend that incorporates a small proportion of red Champagne from Pinot Noir, adding extra depth and red fruit character. This also makes the style of rosé Champagne directly relevant. What gives rosé Champagne its color? In this cuvée, it is achieved by blending with a small amount of red Champagne from Pinot Noir.

Vineyards and region

The origin is broad within Champagne, but with a very targeted selection of terroirs that can express red fruit and finesse.

  • Location / Origin: Rosé Absolu is composed of the 3 classic Champagne grape varieties. For the rosé color and red fruit character, a small amount of red Champagne, made from Pinot Noir from Cumières and Les Riceys, two important sources for red Champagne, is added.
  • Regional context: The house is located on the Avenue de Champagne in Épernay, a historic core area within the appellation. This underlines how firmly Boizel is rooted in the region itself.

Vinification and aging

The cellar approach here is clearly focused on precision, roundness, and a refined rosé style with length.

  • Fermentation: The rosé color and red fruit aromas are created by adding a small amount of red Champagne during blending. This gives the wine more character and extra refinement in its fruit profile.
  • Aging / Oak maturation: 30% of the blend consists of reserve wines, of which 4% of the reserve wines are aged in large oak foudres. This gives the cuvée more depth, complexity, and a softer mid-palate structure.
  • Bottle aging: The wine ages for 3 years on its lees. This allows the mousse to gain finesse and gives the Champagne more length and complexity.
  • Dosage: At 7 g/l, this Champagne remains beautifully dry, while retaining enough roundness to beautifully support the red fruit and satin-smooth texture.

Grape composition

The blend has a classic structure, but with a clear emphasis on Pinot Noir for structure and rosé character.

  • 40% Pinot Noir – Champagne: Pinot Noir forms the backbone of the wine, giving it character, finesse, and its refined red fruit tone. Within this proportion, 8% is vinified as red wine.
  • 30% Chardonnay – Champagne: Chardonnay brings elegant freshness and extra precision to the blend.
  • 30% Meunier – Champagne: Meunier gives the cuvée more fruit, roundness, and accessibility on the attack.

Tasting notes and serving tips

Light pink in the glass, with golden and coppery reflections and a very fine, lively mousse. On the nose and palate, you taste subtle red fruits such as wild strawberry, cherry, and raspberry, complemented by citrus, a light spiciness, and a fine mineral undertone. The finish is elegant, fresh, and remarkably long.

  • Serving temperature: 8–10 °C works best here, as this range keeps the mousse lively while allowing enough room for the red fruit and delicate spiciness.
  • Food pairings: Charcuterie, lamb, and desserts with red fruits pair beautifully, while it also truly shines as a refined summer aperitif.
