Subsequently, the wine undergoes a natural infusion of \u003cstrong\u003erose petals\u003c\/strong\u003e, which enhances its floral character, after which it is bottled while retaining its fine mousse. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003cspan class=\"PDq2pG_selectionAnchor\"\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eDomaine E de M is a special project by the \u003cstrong\u003eCatena family\u003c\/strong\u003e. It arose from Elena Maza, Nicolás Catena's wife, who desired a lighter alternative to traditional wine without losing the sophistication of a good aperitif. Laura Catena enlisted the Catena Institute of Wine for this purpose. Under the guidance of oenologist Agustín Silva, they work with sensory analyses, wine chemistry, and tasting panels to develop alcohol-free wines that retain as much true wine structure as possible. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eIn the glass, the N.0 ROSÆ is light salmon pink with a refined mousse. The profile is fresh and distinctly aromatic, with notes of \u003cstrong\u003erose petals, pear, and citrus\u003c\/strong\u003e, followed by melon and a slightly herbaceous, floral finish. The subtle bitterness and fresh acidity ensure that the wine does not come across as simply sweet or like lemonade. \u003cspan class=\"contents\"\u003e\u003cspan class=\"\"\u003e\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eServe well chilled, around \u003cstrong\u003e6–8 °C\u003c\/strong\u003e.
