After careful hand-harvesting, the grapes are destemmed and fermented for nine days in stainless steel tanks at around 28°C. Only the free-flowing wine is used for this cuvée. A portion of the wine (50%) is aged for two months in French oak staves with medium toast, adding subtle vanilla notes and structure.
