The Vermentino grapes are sourced from vineyards located at an altitude of 200 meters above sea level. The soil is sandy and silty, predominantly sandstone, giving the grapes unique characteristics. They are harvested entirely by hand during the second week of September. After destemming and pressing, alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 13 degrees Celsius. The bunches ripen evenly on the very old vines, and this wine is made from a premium blend of Cabernet Sauvignon, Cabernet Franc, and Merlot. A kind of Margaux from Italy, if you will. Only the finest bunches nurture this premium wine. The entire wine is then aged in 225L oak barrels for at least 12 months, after which the wine is allowed to rest for another 6 months in stainless steel tanks. Once the juice is bottled, it's not immediately drinkable; further aging in the bottle is essential.
