It's worth noting that they use far fewer sulfites in their production, and all wines are vegan and histamine-free, making them allergy-friendly.\n\n\n\n\u003ch2\u003e A rich and elegant Verdejo from Menade\u003c\/h2\u003e\n\n \nThe grapes for this Nosso Verdejo Natural come from Finca Menade, an estate located 750 meters above sea level near the Duero River. The soils in the vineyards consist primarily of limestone and stony varieties. After harvest, the grapes are quickly transported to the winery, where they are fermented with wild yeasts at temperatures between 18 and 24 degrees Celsius. A second fermentation follows, which gives the wine its volume and smoothness. Nosso is then aged on the skins for four to five months. Before being released, Nosso is aged in the bottle for a further three months. The Nosso has an intense floral aroma, creamy and with milky notes. After pruning, they purify the soil and vines with ozone and treat them with trichoderma, a rapidly replicating fungus that prevents potential attacks. Once harvested, the grapes are cooled considerably before being pressed. Alcoholic fermentation takes place in stainless steel tanks with wild yeasts (from the vineyard) at 18 and 22 degrees Celsius. The wine is then briefly aged on its lees.\n\n\n \nIt's a true joy to serve, as most bottles remain in Spain, partly due to the impeccable quality. The joy begins the moment the bottle is opened; as soon as the juice is aired, a vibrant aroma of citrus and wildflowers is released.
