The Big Fat winery originated in the south of France when winemaker Luc was walking among the vineyards in the Languedoc region. There, he spotted a prime vineyard between Narbonne and Limoux. He was immediately captivated and managed to purchase this old vineyard. The harvest was \"Big and Fat,\" he said, and the name for these wines was born. He devoted considerable attention to the old vineyard and succeeded in creating a truly top-notch wine from the Chardonnay grape!\u003c\/p\u003e\n\n\u003ch2\u003e Wood aging for the Big Fat Buttery Chardonnay\u003c\/h2\u003e\n\n \u003cp\u003eThe vineyards overlook the Limoux and are planted facing south. This allows the bunches to receive ample sunshine and ripen very evenly. The fresh breeze blowing through the vineyards provides the necessary cooling for the harvest, resulting in a long growing season. The ancient soil, where wine has been grown for hundreds of years, uniquely contributes to this Big Fat Buttery Chardonnay. The gravel, clay, and limestone give the harvest great strength and richness. Once the Chardonnay bunches have reached full ripeness, they are harvested by hand and rigorously inspected under the supervision of winemaker Luc. After this, the entire wine is fully aged in oak for 6 to 7 months. In the glass, it erupts into a golden yellow, almost dark yellow, with a faint shimmer of ochre. Its aroma is full of character, with a beautiful presence of cedar, vanilla, and spice combined with peach and apricot. We can't wait to take a sip, and the palate is caressed by hints of butter, vanilla, and yellow fruit. The thick texture creates a warm and unctuous sensation. Deep flavors of apricot, a hint of citrus, and plum complete the experience. It's no wonder this Big Fat Buttery Chardonnay is always sold out; it's a great wine at this price point! The quality was truly astonishing, and the harvest was \"Big, Fat, and Spicy,\" Luc explains, which is where the name comes from. This full-bodied Cabernet Sauvignon truly has it all: ripeness, the strength of the wooden barrel, and the softness of the vineyards' southern location. A true discovery, and at this price—shhh, don't tell anyone!\u003c\/p\u003e\n\u003ch2\u003e Big Fat's old Cabernet Sauvignon vineyard\u003c\/h2\u003e\n\u003cp\u003e The centuries-old vineyard is planted in a soil of limestone, gravel, and clay, allowing the vines to develop deep roots. These deep roots allow them to easily absorb moisture and nutrients from the old soil structure. This is one of the key components, explains Luc. The climate in the south of France is perfect; many strong summer days combined with the fresh ocean breeze create considerable depth. The Cabernet Sauvignon bunches are given time to ripen slowly and evenly. Once the harvest is ripe, all bunches are hand-harvested and rigorously inspected. Only the finest bunches are used in this Big Fat Spicy Cabernet Sauvignon.\u003c\/p\u003e\n\u003ch2\u003e Wood aging for the Big Fat Spicy Cabernet Sauvignon\u003c\/h2\u003e\n\u003cp\u003e The beautiful, spicy black juice is then aged in oak barrels. This period lasts at least nine months, with maturation lasting up to a year. This varies somewhat depending on the barrel and vintage, as the Cabernet needs sufficient rest. The result is a stunning wine that lives up to its name! Then, upon opening the bottle, a delightful experience begins, as the spices and black fruit quickly emerge. In the glass, it transforms into a beautiful blackcurrant red with a lovely purple hue. Our senses are fully alert, and upon smelling this red wine, we are surprised. A beautiful bouquet of black fruit complemented by vanilla, cedar, and abundant spice. This style continues on the palate; the tongue is initially pampered by hints of blueberry, blackberry, and cherry, before transforming into spice and vanilla. Give this red wine a good swirl in the mouth, as we also taste pepper, chocolate, and a touch of cherry jam.
