After harvest, each parcel is fermented separately, after which Babydoll's winemaker bubbles the wine. Well, leave that to Natalie Christensen, because this is a superb wine! As soon as the bottle is opened, we smell the Sauvignon Blanc grape; beautiful nuances of passion fruit and citrus peel. The color is clear with a green shimmer, while the nose is stimulated by notes of grapefruit, passion fruit, and some green herbs like mint. The fresh palate leaves the palate enchanted with abundant freshness from both white and citrus fruits.
