Major winemaker Michel Chapoutier also has a beautiful vineyard in this Mediterranean climate. At the foot of the Montagne du Lubéron, the Carignan, Cinsault, Grenache Noir, Mourvedre, and Syrah grapes are grown for this red La Ciboise. The warm climate contributes to a full, vigorous harvest, slowed by the wind, which cools the bunches, contributing to a calm and balanced growing season. Michel Chapoutier is a visionary and pioneer in biodynamic viticulture and one of France's most respected winemakers. He brought the family business's reputation to the top of the Rhône.

The harvest of the La Ciboise Costieres de Nimes

Once the grapes have reached their full ripeness after a long ripening period and still retain sufficient acidity, they are harvested. In the middle of the night, while the sun is still setting, they are brought in in small crates. After a short journey behind a tractor, they arrive at M. Chapoutier, where they are placed on sorting tables to select only the finest bunches for the wine. Only the best is good enough for this red La Ciboise. The entire wine is fermented and regularly stirred to preserve its freshness and fruitiness. After this period, it is aged in its entirety for six months in oak barrels, allowing it to mature. The result is stunning, and at this price point, Michel Chapoutier knows how to attract many restaurants with this wine. In 1934, the Marquis de Jouennes, as a precursor, decided to bottle Chateau de Chamirey wines at the estate. Today, his grandchildren continue his work. The Pinot Noir grape is less widely planted in Mercurey than Chardonnay. White is therefore the most common wine here, but red is definitely not to be underestimated. And Chateau de Chamirey is proof of that. This estate owns more red vineyards than white. The red wines are made with an emphasis on fruit and suppleness. High quality is paramount. Of the total 95 hectares, 38 hectares are planted with the appellation's most renowned Premiers Crus. The vineyards are managed with great care, ensuring high quality.

The grapes are harvested by hand and then sorted by hand. After destemming, the grapes undergo cold maceration for four to six days at a temperature of ten degrees Celsius to extract the color from the skins. Fermentation then follows at 24 degrees Celsius, reaching a temperature of 31 degrees Celsius in the final stages. Finally, the wine is aged for twelve months in 80 percent oak barrels and 20 percent stainless steel vats.

A fruity Pinot Noir from Chateau de Chamirey

The nose offers a wide palette of impressions, with hints of vanilla, black cherries, strawberries, and blueberries, with a touch of cinnamon in the background. In 1996, Domaine des Perdrix was acquired by the Devillard family. The vineyards comprise a total of 30 hectares. The terroirs are of very high quality and therefore produce beautiful and complex wines. This estate can easily be called the family's flagship estate, with plots in renowned villages such as Gevrey-Chambertin, Nuits-Saint-George, and Vosne-Romanée.

The harvest is carried out entirely by hand. The grapes are then transported to the cellar in small crates to prevent crushing. All their vineyards are cultivated organically or biodynamically to preserve the natural balance and to best emphasize the unique character of each region, combining its soil, climate, and grapes. Today, they own 240 hectares of vineyards in the Rhône Valley. They often focus on a single grape variety, combining the true expression of the grape variety with the unique terroirs of the area.

The Grenache grapes are harvested first because they have a considerable ripening capacity, which quickly leads to overripe aromas. Such aromas are sought after for well-known Roussillon wines. However, this is not the case for Marius wines. Finally, the Syrah grape is harvested. The vineyards are regularly visited to check this ripeness. The grapes macerate for ten days at a controlled, cool temperature so that the tannins and aromas of fresh fruit penetrate the wine's juices without compromising the desired balance. They have 12 hectares of vineyards with very old vines. Thanks to their location, the grapes ripen exceptionally well, allowing the winery to produce exceptionally good wines using traditional vinification methods. This is certainly the case with this structured Pinot Noir, with a surprising aroma and fruity character.

The vineyards of Jerome Chezeaux

The Jerome Chezeaux estate was founded in 1930 and has had several owners since then. Located in Prémeaux-Prissey, just south of Nuits Saint Georges, the estate owns approximately 12 hectares of vineyards, some of which were brought into the family from the estate of Jerome's wife, Pierrette. The vineyards are well-maintained and are spread across the villages of Prémeaux, Nuits Saint Georges, Vougeot, and Vosne Romanée.

This Pinot Noir is vinified using traditional methods. First, it's harvested by hand, after which only the finest grapes undergo a cold maceration in the winery. This maceration lasts approximately 3 to 4 days. The wine's structure is then assessed, and depending on the results, it's decided whether the skins require frequent immersion to achieve the desired structure and flavor. Malolactic fermentation then follows, taking place in small oak barrels. After approximately 18 to 24 months, the wine is bottled.

The warm and fruity notes of Jerome Chezeaux Pinot Noir

Enjoy a structured wine with this Jeroma Chezeaux Pinot Noir. It's a colorful wine with refined elegance and a typical Pinot Noir character. The aroma reveals a fruity character, with a dominant cherry and floral notes. Founded by Bernard Bichot, the winery has grown over the years into a leading family business. The winery owns approximately 100 hectares of vineyards in the historic center of Beaune and produces high-quality wines. Albert Bichot is known for its innovative approach to winemaking, using sustainable and organic methods in both the vineyard and the cellar. Their focus is on preserving the unique terroir of the vineyards, which is reflected in the flavors of their wines.

The Pinot Noir grapes for these Vieilles Vignes come from 25- to 30-year-old vines growing in the Côte de Beaune and Côte de Nuits regions. The soils, primarily calcareous clay, contribute to the pleasant flavor and character of the final wine. Only the very best grapes are selected and then pressed in the winery. The pressed juice is transferred to oak barrels and stainless steel tanks for fermentation. Temperatures are carefully controlled, and fermentation lasts approximately 18 to 25 days. The name Les Allots is said to derive from "à l'eau," a reference to former humid conditions that, through clever drainage and good vineyard management, have been transformed into a healthy, well-draining parcel. Upon arrival, the grapes are rigorously sorted and, depending on the vintage, partially or completely destemmed to maintain the balance between freshness and structure. This is followed by a short cold maceration of approximately 3 to 4 days, a phase during which color and aromas are extracted from the skins without fermentation. The alcoholic fermentation itself is lengthy, typically around 25 to 28 days, with gentle pumping over and cap immersion to gradually extract tannins and flavors. The wine is then aged for approximately 14 to 16 months in oak barrels, using around 15 to 20% new wood to add depth without overpowering the fruit. Before bottling, it is only lightly filtered with white earth to preserve the structure as much as possible.
