With its beautiful characteristics, it can be found all over the world, and a wide variety of wines are made from it. This grape has helped put Bordeaux wines on the map, as it boasts ancient Cabernet Sauvignon vines. Originally, the grape found its identity in the 17th century when the blue Cabernet Franc and white Cabernet Sauvignon were combined. crossed. The grape has since spread across the globe.

Characteristics of the Cabernet Sauvignon

The characteristics of Cabernet Sauvignon are very distinct; the grape grows on small bunches with very thick skins. These thick skins provide it with a dose of color, tannins, and power, all of which you can taste in the wine. The growing season is long for Cabernet Sauvignon, usually lasting 4 to 6 weeks longer than other grape varieties. This long ripening process makes Cabernet Sauvignon full-bodied and powerful, allowing it to develop a naturally robust flavor. For this reason, Cabernet Sauvignon is almost always used in top wines.

Cabernet Sauvignon is also perfect for aging in oak barrels; the wood reduces the tannins, making it fuller and more refined in flavor. Cabernet Sauvignon also often pairs well with other grape varieties. For example, in Bordeaux, Cabernet Franc and Merlot are often added to red wines to create more diversity. You'll taste some similarities in every Cabernet Sauvignon wine, but it still confuses us in different countries. After all, the grape influences the terroir in every country to some extent.

What does Cabernet Sauvignon taste like?

On the nose, almost all Cabernet Sauvignon wines have hints of blackcurrant fruit, ripe plums, and some berries. If the wine has been oak-aged, you'll also detect notes of coffee, chocolate, and spices. The palate is always powerful and full-bodied, with plenty of black fruit, dominated by blackcurrants and blackberries. The ripe tannins give it a lovely dry flavor with notes of vanilla, cedar, and some spice. Sometimes you'll also taste truffles and roasted nuts in a Cabernet Sauvignon, but only in wines of excellent quality.

Cabernet Sauvignon wines can be aged for a long time simply because they contain more tannins than other grape varieties. We can roughly say that wines under ten euros can be aged for a maximum of six years after harvest. For exclusive wines, and unfortunately also more expensive ones like the top wines from Penfolds, Bernardus, and top Chateau wines, this can be up to 50 years. Since then, the Gras brothers have been constantly striving to modernize their winemaking, which sometimes includes changes to their labeling. In 1993, Hernán and Eduardo joined forces to establish a beautiful winery in the heart of the Colchagua Valley. This acquisition was the culmination of a long search by Gyles and Barbara Webb for that rare location where exceptional wines could be made, as this was their sole purpose. The farm comprises 157 hectares of land on the slopes of the Simonsberg Mountains. The elevation ranges from 370 to 640 meters above sea level on primarily south-facing slopes, making Thelema one of the highest and arguably coolest wine farms in the Stellenbosch area. Although wine was made on the farm in the early 2000s and table grapes were produced until the late 1960s, there were no vines on the farm at the time of purchase. This magnificent red wine is a unique Argentinean blend of typical French grape varieties: Malbec, Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot. A Bordeaux wine with an Argentinean twist. The vines are all at least 80 years old and therefore produce few, but still perfect, grapes. The high altitude of the vineyards allows the grapes to mature in complete tranquility. The grapes receive ample warmth from the sun, but also the delightful coolness of the night and the wind that blows through the Andes. Meltwater, which slowly drips down from the perpetually snow-capped peaks, creates a natural irrigation system. This ensures the grapes receive sufficient, very pure water. It is precisely Rust en Vrede that has been producing wine in beautiful South Africa for years, since 1694. Years of experience and one of Stellenbosch's oldest vineyards have made Rust en Vrede a true icon in the wine world. But that really only happened after Mr. Jean Engelbrecht took over in 1977. He recognized that quality and wanted to improve it, and he more than succeeded. The Rust en Vrede Stellenbosch winery has become an iconic winery with great depth in its wines.

The old Cabernet Sauvignon vineyard of Rust en Vrede

A majestic wine, this Rust en Vrede Cabernet Sauvignon. The grapes come from the beautiful Stellenbosch wine region, where the sun always shines and only 479 mm of rainfall falls annually. Therefore, it is essential that these Cabernet Sauvignon grapes come from old, deeply rooted vines. The climate in which Cabernet Sauvignon grows is perfect, with just the right amount of sun because the vineyard faces north. A light breeze and low nighttime temperatures ensure a balanced growing season. Drip irrigation gently provides the vines with moisture, essential for the Cabernet Sauvignon to mature perfectly. The soil in which this wine is grown is primarily sandstone and granite, something this red grape absolutely loves. It therefore develops like no other, and a top-notch wine can be produced.

Completely manual harvest for this red wine

When the Cabernet Sauvignon is perfectly ripe and mature, it is hand-harvested under the supervision of winemaker Coenie Snyman. Rust en Vrede is known for selecting only the finest bunches, and this is evident in this red wine. Harvesting begins in Stellenbosch early in the morning. Individually, they are inspected and placed in small crates to prevent damage to the bunches. Upon arrival, the Cabernet Sauvignon grapes are crushed and fermented in wooden barrels. After this period, the entire wine is aged for at least eighteen months in French oak barrels in the Rust en Vrede cellars. The taste is sublime and superior. Pure, refined, and elegant. Three keywords that immediately came to mind when tasting AIX. The estate boasts 21 buildings with 21 different gables. One of Spier Estate's series, the 21 Gables Collection, has also graced these 21 gables. The estate and its buildings date back to 1692 when founder Arnout Janz, a German colonist, purchased part of an old riverbed. Winegrowing was emerging in South Africa, and he saw the potential of the fertile riverbed. From that moment on, Spier Estate became a reality. Over the years, there have been the necessary modernizations, but always with the preservation of the estate as it was back then.

Spier Signature Cabernet Sauvignon

Besides the 21 Gables Collection, there are several wine series, including the Signature Collection. This series was specially developed to give Spier its signature to world wines. And they certainly succeeded. A beautiful example from this Signature Collection is the Spier Cabernet Sauvignon. While Cabernet Sauvignon is a grape variety that enjoys global success, Spier manages to put its own unique spin on it. The grapes are planted in somewhat poorer soil. This is important for Cabernet Sauvignon, otherwise, only the leaves of the vines might thrive. Furthermore, the warm daytime temperature is crucial. The warm sunshine allows the grapes to develop optimally. After hand-harvesting and pressing, 20% of the wine is aged in oak barrels for 8 to 10 months. The remainder is aged in stainless steel barrels containing oak staves, giving the wine even more power and suppleness. The result?

What does the Spier Cabernet Sauvignon taste like?

A wonderfully powerful red wine! The color is deep dark red with a purple rim. The nose offers full aromas of black cherries, currants, and blackberries interspersed with notes of vanilla, licorice, and a hint of paprika. The taste is powerful, full-bodied, yet smooth! Chateau Musar is a winery from a less-known wine country: Lebanon. Despite coming from a country where few have heard of wine, they produce beautiful, classic wines. The vineyards for this Young Musar wine are located at an altitude of approximately 1,000 meters. These vineyards were planted in 2000 and are situated in the Bekaa Valley, a perfect area for growing grapes. The grapes thrive here thanks to the interplay of daytime warmth and evening coolness.

The splendor of Lebanon can be found in this Musar Jeune

This Musar Jeune Red is a blend of Cinsault, Cabernet Sauvignon, and Syrah. The same grapes are used for Château Musar's top-quality wine, only the composition is different. Musar Jeune uses more Cinsault grapes. This grape has a wonderfully fruity character that many of us know from the Rhône region. To ensure that Château Musar also had a red wine suitable for everyday use, they created this Musar Jeune series, and not entirely without success, as these wines possess depth and a pleasant suppleness.

The aroma and taste of the Musar Jeune Red

The ruby red color reminds us of a fine Rhône wine. A magnificent red wine, and the younger sibling of Château Musar. It's a wonderfully full-bodied red wine with aromas of herbs, licorice, blackcurrant, and a touch of fig and vanilla. The taste is also truly superb; what a refined wine.

The complexity of Hochar Pere et Fils Chateau Musar

Hochar Père et Fils has been described as Château Musar's "second" wine, and it bears some resemblance to the "Grand Vin": rich, spicy, and deeply fruity, with a soft quality imparted by extended oak and bottle aging. Since its launch in the late 1980s, it has been sourced from a single vineyard in the Bekaa Valley, planted in the late 1940s. When young, the wines are robust and aromatic, with notes of baked plums, warm earth, leather, thyme, and dark chocolate. With age, they become tawnier and more vibrant.

The grape blend creates a character comparable to a Rhône wine, with all its soft and spicy notes. The grapes are carefully harvested and subject to strict quality control to ensure that only the very best grapes reach the bottle. This red wine has been aged for nine months in oak barrels from Nevers, giving the Hochar the necessary complexity and flavors. Before being released, it is aged for another three months in the winery's cellars.

The aroma and taste of Hochar Pere et Fils

The Hochar has a bright ruby red color—red fruit on the nose; bittersweet cherries, sloes, and a hint of dark chocolate. Classic bright red fruit flavors and sweet, spicy notes follow on the palate. The tannins are soft, the acidity fresh and very long. It will age well in cellars and will keep for years. Try it with roasted pork and garlic, fried chicken à la Bordelaise (with potatoes and fried onion rings), or an artichoke and wild mushroom salad.
//cdn.shopify.com/s/files/1/0594/9358/0879/files/hochar-pere-et-fils-chateau-musar_4222.webp?v=1770046215
carmen-insigne-cabernet-sauvignon
Carmen Insigne Cabernet Sauvignon
This accessible Cabernet Sauvignon from Carmen is not oak-aged and crafted for freshness and purity. This series of wines is called the Insigne series. A magnificent series, this full-bodied Cabernet Sauvignon is also sultry and fruity. All in all, a Cabernet Sauvignon worth discovering!

The vision of Carmen winery

Carmen Winery was founded in 1850 by Christian Lanz, who named it after his wife Carmen. Carmen is the oldest winery in Chile. Today, they utilize the latest winemaking techniques and are one of the largest players in both quality and quantity of Chilean origin. All grapes come from their own vineyards, prioritizing quality over quantity. To achieve this, Carmen Vineyards has restricted yields. This results in wines that are more powerful and full-bodied than many Chilean wines. Moreover, the wines truly taste like the grapes they are made from; they are uniquely authentic. Anyone who tastes them will be immediately impressed by the vast potential of this promising wine country.

The harvest and taste of Carmen Insigne Cabernet Sauvignon

Normally, Cabernet Sauvignon quickly develops acidity and hardness, but this Carmen Insigne variant is fruity and smooth, yet retains the characteristic Cabernet Sauvignon character. A wine with character, indeed. To achieve this result, the grapes are harvested when they are perfectly ripe, but not overripe. Harvesting is manual to prevent any damage to the grapes, which would otherwise compromise the fruit. Because the grapes are perfectly healthy, they are allowed to undergo up to eight days of cold maceration on the skins. The temperature during this process is around five degrees Celsius. This gives this red wine its delicious fruit, without absorbing the hardness from the skins and seeds. Fermentation takes place in stainless steel, after which forty percent of the wine is aged in oak barrels from France and America. This beautifully rounds it out into a smooth and soft Cabernet. The Cabernet Sauvignon is immediately noticeable on the nose, with aromas of cherries and berries, a touch of mint, and warm spices. In terms of taste, this Carmen Insigne Cabernet Sauvignon is very complete, ripe and round with thick flavours of black fruit, herbs and a little pepper.
